1 diced cucumber
1 can of chick peas
10 thinly sliced scallions
1 pound of diced tomatoes
1/3 cup of chopped parsley
1/3 cup of chopped mint leaves
1/3 cup of chopped basil leaves
1/2 cup of squeezed lemon juice
1 tablespoon minced garlic
1/2 cup of olive oil
8 ounces of diced feta cheese
Start by having all of your ingredients accessible for efficient preparation. In a salad bowl, throw in the cucumber, chickpeas, scallions and tomatoes and lightly mix together.
Combine light salt and pepper, garlic and lemon juice in a separate bowl. Carefully pour in the olive oil and whisk to complete the dressing. Add dressing to taste. If you want the main components of this great summer salad to shine, take it easy on the dressing.
Top your salad with feta and that’s it! The Barefoot Contessa recommends presenting this refreshing summer salad with sliced pita bread for a special touch, but it’s very tasty on its own. Bon appetite!
